I was surprised to find so many smokers interested in the nutritional aspects of smoking. The two principal areas of concern were:
Should smokers take vitamins?
How can smokers keep from gaining weight after they quit?
I will have to admit that I was quite skeptical about the notion that smokers might be able to protect themselves against some of the hazards of smoking by taking high levels of certain vitamins. But I must say I came away from our research quite convinced that it is worthwhile for smokers to take steps to upgrade their diets. Researchers now estimate that diet is responsible for 30 percent to 40 percent of all cancers in men and 60 percent of all cancers in women. A recent report by the National Cancer Institute suggests the following guidelines to help reduce cancer risk.
Guidelines to Help Reduce Cancer Risk
Eat less fat.
Eat more fruits, vegetables and whole grains.
Ear fewer foods that are smoked, pickled or cured.
Avoid food additives.
If you drink, do so in moderation.
Valuable Vegetables
There is substantial evidence to suggest that a high, vegetable diet can protect us against cancer. A Japanese study headed by Dr. Takeshi Hitayama, chief of epidemiology at Tokyo’s National Cancer Research Institute, concluded that lifestyle factors, such as eating red meat and drinking alcohol, may increase one’s cancer risk. Subjects who smoked, ate red meat and drank alcohol, but who did not eat vegetables daily, were 2.5 times as likely to die of cancer as those who ate vegetables daily but did not drink, smoke, or eat red meat.
The Japanese researchers concluded chat even heavy smokers can reduce their chances of dying of cancer by eating more vegetables. Dr. Hirayama speculates that this protective effect may be due to vitamins A and C, fiber and other nutrients in vegetables.
A study by the American Cancer Society suggests that eating fruit or drinking fruit juice regularly may also reduce the risk of lung cancer incurred by cigarette smoking.
The body’s defenses ? against cancer and other disease require certain nutrients to function effectively. Present studies suggest that in addition to vegetables, fruits, and grains, the most important anti-cancer nutrients are vitamins A, C and E; selenium; isothiocyanates; indoles; calcium, and fiber.
